- Hard Boil 2 Dozen Eggs
- Fire up your grill/smoker w/ some apple wood. Hickey and Mesquite is too strong for this.
- Ice quick cool the eggs and shell.
- Place them in the smoke, keep the heat as low as possible to get smoke. You don't need to cook the eggs, just flavor them.
- Remove the eggs when they get a nice yellowed color like bad stained teeth.
- Cut eggs in half, pop out the yolks.
- Put yolks in a bowl with 1 medium onion, finely chopped, caramelized & 2 anchovy filets, roughly 1/4 cup of mayo to start.
- Blend together, keep adding mayo until its gets smooth then add a couple table spoons of yellow mustard.
- Put the yolk mixture into a cake icing bag and pipe it into the hollowed eggs whites.
- Sprinkle with some Cayenne peppers for a zing.
- Sprinkle with paprika and black sesame seeds for nice color contrast.
