Southern Hush Puppies

Ingredients:
1/4 Cup Milk
1 Egg
2/3 Cup Corn meal (straight up yellow corn meal, do not substitute)
1/3 Cup AP Flour
1 1/2 teaspoon Baking Flour
1/2 teaspoon garlic powder (powder only please)
1 teaspoon salt
1 1/2 teaspoon onion powder (powder only please)
1 T sugar
1/4 teaspoon ground pepper
1 T parsley (fresh or dried)
1/2 onion, minced finely with food processor (juice and all)
Preparation:
-Mix all wet ingredients in a bowl (milk and egg).
-Mix all dry ingredients in another separate bowl.
-Combine the dry ingredients into the wet ingredient bowl.
-Stir vigorously until all ingredients are mixed well. Batter will be very thick, almost too thick to stir, use a spatula to mix. It's ok for the batter to be thick, it should be!
-Let this batter sit for half an hour, very important! The baking powder needs to do it's magic, if you don't let this sit then you won't get good results!
-Heat deep fryer with vegetable oil to 350
-After batter has set for half an hour, stir one more time
-Using whatever method you desire (I like the 2 spoon method), dump 1 Tablespoon of batter into the fryer, one at a time so the puppies do not stick together. It all depends on the size of your fryer on the number you can fry at a time.
-Light to medium brown will do, don't over-fry the puppies or they won't taste right.
-Cool puppies on a plate or baking sheet covered with paper towels to drain and cool. -Sprinkle with salt as desired to season.
