Italian Sausage & Pasta

Italian sausages over pasta with sauteed onions and peppers in a rich red wine sauce! mmmmm!

Prep Time: 15 Minutes
Cook Time: 1 Hour
Servings: 5
Difficulty: Medium

Ingredients:

 

  • 2T olive oil
  • 1/2c water
  • 4t butter
  • 1 red onion, sliced thin julienne
  • 1 yellow onion, sliced thin julienne
  • 6 lg cloves garlic, minced
  • 1 red bell pepper, sliced thin julienne
  • 1 green bell pepper, sliced thin julienne
  • 2t basil
  • 2t oregano
  • 1/4c Italian dressing
  • 1/2c red wine (Merlot is nice)
  • 5 large Italian Sausages (mild, sweet, or hot )
  • 1 box of Linguine or pasta of your choice
  • Salt & Pepper to taste

 

Preparation & Cooking Directions::

 

Don't forget to prepare a large pot of salted water for boiling the pasta!

 

Over medium heat, flash brown the sausage in a saute pan with 2T olive oil on both sides, you're not cooking them just browning (about 3 minutes per side on medium heat). When brown both sides, add 1/2c water and cover, cook sausage in water for 15 minutes. Do not let the pan dry out. Meanwhile, prep and cook the veggies (below).

 

Julienne the onions and peppers, mince the garlic, keep separated and set aside.

 

In medium saucepot add the butter and onions, cook for 10 minutes. Add peppers and garlic to the pot and cook for another 10 minutes, stirring frequently. Saute veggies until onions and peppers are tender.

 

Uncover the sausages, add the 1/2c red wine to the pan, simmer for a couple minutes to burn off the alcohol.

 

Add sausages and sauce to the saucepot with the veggies. Add basil, oregano, and the 1/4c Italian dressing to the mix. Stir, cover, and cook for 20 minutes on medium low heat.

 

Serve over linguine or any pasta of your choice!
