Homemade Hash Browns
Here's my restaurant style hash browns! Enjoy!

Cook Time: 25 Minutes

Ingredients:
4 Medium russet potatoes, shredded
1/2 cup all purpose flour
2 eggs
2 cups olive oil for frying, or as needed (may substitute vegetable oil)
salt and pepper to taste
1 Medium onion, finely chopped (optional)
Preparation:
Whisk together eggs, flour, salt, and pepper in large bowl, set aside. Shred and rinse potatoes until water is clear, drain.
Cooking Directions:
Toss shredded potatoes in the egg/flour mixture until well coated. Heat about 1/4 inch oil in large skillet over medium-high heat. When oil is sizzling hot add potatoes, cover entire bottom of pan, add just enough potatoes to make a 1/2 thick hash brown. You can also make smaller browns just like pancakes. Brown on both sides and serve!
Customize it!
Add the finely chopped onion to the potatoes during the egg/flour coating stage for a twist of flavor!
