Beer Battered Onion Rings

Onion rings fried in a seasoned beer batter with a light crispy breading and delicious onions inside. You can't taste the beer and there's no alcohol content after cooking. Kid friendly!

Prep Time: 20 minutes
Cook Time: 15 minutes
Servings: 6-8
Difficulty: Easy

Ingredients:
2-3 large sweet onions
1 1/2 cups flour
Additional 1/2 cup flour set aside for dredging
1/4 cup cornmeal
1/3 cup instant mashed potato flakes (secret ingredient!)
3/4 cup water
1 egg
4 T butter, melted
12 oz full flavor beer (light beer does not provide proper flavor)
1 t baking powder
2 t pepper
1 T salt
1 T garlic powder
2 t onion powder
1 T chili powder

Preparation:
Slice 2-3 large sweet onions in 1/4 inch thick slices. Soak covered in buttermilk for 1 hour minimum for best results. You don't have to soak the onions but it does provide for good flavor and batter adhesion. If you don't have buttermilk you may substitute 1 cup milk with 2 T lemon juice.

Cooking Directions:
Combine all dry ingredients into a large mixing bowl.

Heat deep fryer oil to 350F.

When the oil is hot combine the wet ingredients into the dry ingredients and mix thoroughly. Wait 5 minutes for batter to proof. Remove onion rings from the buttermilk and dredge in plain flour, then dip into the batter. Let excess batter drip back into bowl. Drop rings into hot oil, be sure to keep them separate as you drop them or they will stick. Fry in batches.
